My friend, Laura, over at Goose Hill Farm, suggested I jump on the band wagon for Blog Hop Tuesday. So here I am!
My recipe is:
King Ranch Chicken Casserole
1 whole chicken, boiled and deboned (you can also used canned chicken, etc.-this is just what I use)
Reserved Broth or 1/2 can or chicken stock, broth
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel diced rotel tomatoes and chiles, drained
corn tortillas cut or torn into pieces (here you can use doritos, corn chips, or flour tortillas)
1 package Velvetta shredded cheese
1-8oz package cheddar cheese, shredded
3-4 green onions chopped (optional)
1/4 cup green or red peppers chopped (optional)
In a mixing bowl, combine soups and broth together, set aside. In a casserole dish, spray with non stick spray, take corn tortillas and layer the bottom of the dish. Spread some of the chicken over the top of these. Pour some of the soup mixture with of the chicken and sprinkle with onions, peppers, rotel tomatoes, and cheese. Continue layering like this with all the ingredients, including tortillas, using both cheese for the top. Bake at 350*F for 30-45 minutes, until hot and bubbly.
Blessings until next time!

Oh, this sounds DELICIOUS! What time's dinner? :> )
Love you!
Nice twist on an old favorite! The family loves chicken and casseroles, so I'll be trying this one for sure.
